Apple Crumble Recipe

ice cream apple crispThere was an excellent blog called The Vegan Dad. His tagline was, “I only make one claim about my food: it’s vegan.” I fell in love with this tagline, and it inspired me to not be so darn healthy ALL the time. There’s beauty and happiness when I feed my soul with absolutely delicious sugar-filled desserts, too. And my soul can remain happy that yes, they are vegan – but not a TON else in the way of health. Although, this apple crumble is a HUGE step up from most you’d find out there. You’d just never know it from the taste. 😉

Today, inspired by a beautiful Toronto day, I figured I’d share one of these desserts with you: apple crisp. This one is sugar-filled, delicious, rich, and, as always, vegan.

Apple Crumble Recipe:

Ingredients for the apple part of your apple crumble:
1/2 cup coconut palm sugar
1 tbsp. ground almonds
3 apples, cored and sliced about 3 mm thick
1 tbsp. cinnamon
1/2 cup water

Ingredients for the crumble part of your apple crumble:
1 cup coconut palm sugar
1 cup oat flakes
.5 cup coconut oil
1 cup oat flour, whole grain flour, gluten-free flour or almond flour (I used 1/2 ground almonds, 1/2 oat flour)

Steps to create your apple crumble:
Preheat oven to 350 degrees F.

Grease a pan with coconut oil. Add your apples to the bottom of the pan, spreading them out.

Mix 1 cup coconut sugar, 1 tbsp. ground almonds, 1 tbsp. cinnamon and 1/2 cup water together and pour over the apples. Get your hands in there and mix it all up so that all of the apple pieces are covered in that sticky goodness!

Add remaining 1 cup coconut sugar, oat flakes and 1 cup flour to a separate bowl.

Melt coconut oil and add.

Stir until the mixture darkens, and until the entire dry mixture is wet with the coconut oil. Crumble over the apples so that it’s evenly spread.

Bake for 40 minutes and then dig in! Enjoy your apple crumble with a glorious smile on your face. 🙂

Best served with vanilla ice [coconut] cream! I love Coconut Bliss non-dairy ice cream, or So Delicious cashew-based ice cream.
