Rosemary & White Bean Dip

IMG_20131024_113516I love the metaphor of safe driving in life, and this bean dip recipe came out of it.

When you’re driving, it’s so important to look ahead, but not get so lost in what’s ahead that you forget what you’re doing where you are, in this moment.

I love that for life, and it’s something that I teach clients, too for food, health and living well.

You have to know when you’re going to be CRAZY busy, and have food planned (or know of fast, grocery store alternatives that are mostly or completely pre-cooked), so you don’t run yourself into the ground.

This weekend I will be SWAMPED, and I’m well aware of that (looking ahead).

(I’m doula training this full weekend so I can be at my sister-in-law’s birth!)

Which meant that today, I had to pump out my BEST, most DELICIOUS, wonderful recipes that store well for a chaotic weekend filled with love, learning and so much joy. That way I could make everything on this overcast Thursday, and have them ready to nab out of the fridge in their own separate mason jars through Friday, Saturday and Sunday.

The first recipe on my attack list: white bean dip with fresh rosemary. Every time I make it I’m reminded of the family party when I first had it, tried to eat my weight in it, and tried hard NOT to look like somebody who’d never seen food before. Yes, it’s THAT good.

I hope you enjoy it as much as I did on that summer’s day, and as much as I do every subsequent time I’ve made it. Pair it with some fresh cut raw veggies (hello carrots, celery sticks, red pepper and cucumber!) or your favourite superfood crackers!

White Bean Dip (with Rosemary) Recipe:

Ingredients:
2 medium size garlic cloves (I used one mega organic clove I had)
2 tsp. lemon juice
1 large (796mL/28 fl oz.) BPA-free can of white beans, canellini beans or navy beans
2 fresh sprigs worth of rosemary
salt and pepper to taste (about 1 tsp. salt, 1/2 tsp pepper for me)

Method:
Throw everything into your food processor and process it up!

Health Benefits:
Beans contain LOADS of fiber. Fiber helps bring cholesterol out of the body and they also help to absorb all the crud that your beautiful liver was working so hard to get out of your body (via the gall bladder). The rosemary that this dip features is anti-bacterial, anti-cancer, anti-fungal and wildly anti-inflammatory. Rosemary is also traditionally known to improve focus and mental clarity. Cool, right?
